I'm bewildered that a new once hasn't been created since "ROV".
"Deep Space Nine" was my favourite TV series ever. Loved "The Next Generation" too and later seasons of "Voyager".
"The Original Series" was overrated though...
As for the movies, this is the order I'd rank Em In.

Generations is god-awful!! How recently have you watched it?
Khan is the best pretty obviously (although I haven't seen all of them) and First Contact is the best with the TNG crew. Besides that I don't have rankings other than that the even numbered ones are almost always better than the odd numbered ones.
I like the original series the most, it's dated in the right way - although it is very camp. TNG was before my time, watching it for the first time in 07-08-09, it's hit or miss. It's dated in the wrong ways but there's many good parts about it and the Borg kick ass. TNG looks really good when you consider it came after the original series - how daring the cast, story, and set choices were for a sci-fi show. Voyager and DS9 I never really saw, and while I watched Enterprise pretty religiously for 4 seasons, I never really liked it. Ok at best.
I have fairly high hopes about the new one, which I hope to see this weekend, but I'm worried about their interpretation of Kirk - redoing classic characters rarely works, and I'm afraid he'll either come off as a whiny little bitch (Darth Vader) or a prick. Shatner's Kirk was arrogant and everything but still extremely likable.

First Contact is the best Star Trek movie ever made. They'll never top it either. I also like Star Trek IV where they go back in time to Earth.
The reason the original series is "overrated" is because the special effects don't stand the test of time. Its incredibly cheesy.

startrek is cool....i'm excited about the new movie
but its like the beatles vs zeppelin....i'm a starwars kinda guy 
nemisis was a really cool film, i enjoyed it
but as for my top 2 i'd say khan #1 and first contact #2
the motion picture is prolly at the bottom for me...

Wow, I didn't think Harold was a great choice for Sulu, but maybe I was wrong.
I'm curious if the guy who plays Kirk is just doing it however he wants, or if he's playing Shatner a little bit.
Watching Ewan McGregor play Alec Guinuss in Revenge of the Sith was one of my favorite parts of that movie.
