That said it pretty easy to get out of chases by driving down an alleyway or field (if your not driving a truck or something) or hiding behind a wall (if no chopper).

The final heist mission the one where you get everything chasing you (and only 5 star rating I remember), it is for whatever reason actually one of the easiest escapes in the game. Just drive up street then onto the Golf Course.
